I always try. But sometimes a good pizza really does fill the carb void. And since I’m horrible making pizza dough, it’s a few and far between treat for us. But lucky for me the hubs loves fresh food.
When I saw that chicken breasts was on sale at my local Fred Meyer I had to pick it up. And I had a coupon for a few dollars of meat. So win win. I’m in! Scavenged the fridge and grabbed a bunch of fresh veggies to mix. And since I wanted a Mediterranean flair I picked green veggies to go with the lemon I was craving. Now the deets!
– 1 pound chicken breasts
– 3 cups veggies – I used onion, asparagus, celery, zucchini & mushrooms. Use what you have and save a few bucks.
– 2 Tbsp Olive Oil
– 2 lemons – zest & juice squeezed
– 1 Tbsp Mrs Dash salt free seasoning
Dice up your chicken after letting it rest 3-4 minutes and throw back in the pan with the other Tbsp oil & remains lemon juice and zest.
Viola 1-2 minutes you are done.
I made this in about 15 minutes altogether which is something I love. Easy fresh meal! Gave me enough time to cooking, prep, empty the dishwasher, reload it & flip out laundry to the dryer. Success!
