Sausage Spinach Tortellini SOup

I have been craving soup. Which makes me think I’m getting sick. Even today I got home from work and went straight to bed to take a nap. And that’s after I drank a cup of coffee. So… Yeah possibly getting sick.

But I had a coupon for refrigerated tortellini and they were FREE! My most favorite coupon ever!! So between the sale on spinach, sausage and the free tortellini I knew something good was going to come out of this. Originally thought a casserole would do it, but nope today changed my mind.

Sausage Spinach Tortellini Soup 

  • 1 lb Sausage – I used plain but I bet spicy would be good
  • 1 cup diced celery, carrots & onions
  • 2 cups spinach – rough cut them just because I hate a huge chunk of spinach in my soup
  • 2 Tbsp garlic – diced
  • 6 cups Chicken Broth
  • 1 10oz can Cream of Chicken
  • 1 tsp Garlic Powder
  • Parmasean Cheese – Shredded
  • Salt/Pepper to taste

Recipe:

Start by browning the ground sausage. When it is halfway done add the celery, carrots & onions. Once the sausage has browned completely then add the garlic and the spinach. Those should only take a minute to cook up and be soft. Add your can of cream of chicken, chicken broth, garlic powder, a pinch of salt & pepper. I let mine simmer for 10 minutes to get some more flavor out of it.

Get to a rolling boil and add your tortellini. These only need 3 minutes to be cooked. Scoop up and add some Parmesan cheese on top for a little pinch of flavor.

This was mucho delicious. Honestly I was Snap Chatting it and sharing with my friends. This is a great easy dinner and even picky husband liked it.
