So after our Alaskan adventure a few months ago I had a freezer mostly full of fish. We have made a dent in it (hey 2 of us eating fish at least 4ish days a week doesn’t have you flying thru the collection). So I have been experimenting with many recipes. And I think I found a winner with my Halibut Fish Sandwich!!!
Now I’m sure you are thinking fish sandwich – yuck. Only fast food restaurants serve those. Wrong! I can’t think of a time someone has made me a homemade fish sandwich so I thought “Well I’ll give it a shot. What have I got to lose?” Thank goodness I went out on the ledge.
It’s straightforward and only a few ingredients. And if you don’t have halibut I’m sure cod or any other white fish would work in it’s place.
Halibut Fish Sandwich – Dinner for 2
- 6oz Halibut cut into 2 pieces
- 2 Focaccia Rolls
- 1 Roma Tomato – Sliced
- 2 Tbsp Cilantro – diced
- 1 Lemon – cut into quarters
- 3 Tbsp White Sauce
- Mix 2 Tbs mayo, 1 clove of garlic diced, zest of 1 lemon, 1 quarter of the cut lemon squeezed in, 1/2 tsp dried dill, salt & pepper to taste
Toast the roll halves in the pan while prepping the rest of the meal. Mix up the white sauce to taste. Take off the rolls and then put on the halibut. Squeeze a quarter of the lemon on the halibut. Season with salt and pepper to taste. Flip over after 4 minutes, squeeze on another quarter of lemon and season with salt/pepper.Finish cooking for 2-3 minutes. Apply the white sauce onto both halves of the roll. Layer the halibut, tomato & cilantro.
