I have had an affection for soup ever since I was a little girl. I love that its warm and it was always available. And my mom could go easy by just making instant ramen. Or she would cook a bit more and make a chicken noodle soup. Albeit without salt or pepper. Not sure why she never used them? But anyway don’t they say we learn from our elders. I learned how to put salt and pepper on my food – hahah!
We had such a soup affinity my mother had a ramen drawer. That’s right a whole drawer in her kitchen devoted to just ramen. Just to clarify it wasn’t only chicken or beef or pork. It was everything. I wish I would have taken a picture to really share the depth of this drawer. But I didn’t, so you will have to use your imagination.
If my title caught your attention it should. Because we said it everyday. Literally everyday my mom would say it, I would say it, even my little nieces when they came to visit would say it. Life motto right there!!
Because of my love and soup, and my recognition that so much sodium is bad for your health when consumed on the regular like this, I had to learn to make soup on my own. And when I figured out the amazingness of a slow cooker I’m hooked.
One thing I have learned is that frozen chicken breasts, or thighs, can be thrown in the slow cooker as long as you cook it low and slow for 8 hours to get maximum flavor and completion of cooking. Also slow cookers are one of my favorite appliances ever. Even though I think I have said that before…
Mexican Chicken Slow Cooker Soup
- Frozen Chicken Thighs 1.5 pound – I just found these at Costco the other day and I have been pleasantly surprised for the price and the value
- 16oz Salsa – Your preference
- 32oz carton of Chicken Stock – again a great buy from Costco IMO
- 10oz Cream of Chicken soup
- 15oz Re-fried Beans – Your preference
- 12oz Frozen Corn
- 2 Jalepeno – diced
- 1/2 cup Onion – diced
- 1 Bell Pepper – diced
- 2 Tbsp Taco Seasoning
- Toppings of – Shredded Cheese, Sour Cream, Green Onion, Tortilla Chips, diced avocado – all to taste
So throw everything into the slow cooker and let it work it’s magic for 8 hours. Pull out the chicken and shred. Toss the shredded chicken back in. Then layer this deliciousness with toppings of choice.
Truly an easy meal when you are just wanting to throw everything in and get going to work, play, whatever.
