So I have disappeared from the world of blogging because I just have been too busy. Busy working quite a bit, busy with my signs as my side gig, busy with baby shower/gender reveal/birthday planning & parties, busy with life (screw housework, nope I’m stuck doing it – UGH!!!) and busy going on vacation and having fun!!!
The hubs works in Alaska time to time and we decided lets go for an adventure together. So we did. To Sitka Alaska. And we had a blast. I wasn’t sure what I was going to be getting myself into. I’ve never been to Alaska and Hubs knew a guy. Like that we just decide lets go up for a long weekend and hang out with a guy I’ve never met. Yes you might have thought you read that wrong. But we went up and stayed for a weekend with a guy whos a local who took us fishing. It was great. Can I say that enough? It was fun!!!
But going up fishing we got to catch halibut, salmon, rockfish, ling cod and so many other species. Counted it up and we caught 17 different things. So many I can’t even tell you the names of half of them. Shrimp in that mix to. Squirmy little things when you are ripping their heads off. Anyways, I’m telling you all of this because now I have a stocked freezer of fish and wanted to share a few recipes with you.
One thing I have found to be delicious and pretty easy to cook up is halibut. Pinterest to the rescue. So here is my recipe for Halibut with roasted veggies. A one pan meal:
- Halibut approx. 1-2 pounds cut into 1″ wide strips
- 1 lb Tomato – cut into wedges
- 1 small Onion – Cut into slices
- 1 lb Green Beans – I like mine French cut
- You really can do a mix of veggies here as long as they cook the same. Sliced asparagus, carrots, mushrooms. Things to this effect.
- 2 Lemons – Zested then juiced
- 3-4 Tbs Olive Oil
- 1 Tbs Mrs Dash Mix
Preheat oven to 450 degrees. Mix all the veggies together with all the sauce ingredients. Strain the veggies and put on one side of a foil covered baking dish. Next add the halibut to the leftover sauce ingredients. Place on the other side of the foil lined baking dish. Bake 15-20 minutes, until the fish is done.
And that’s it. Easy peasy. I think you could try this with other white fish. I just don’t have any other white fish in my freezer.
