Well life has come together again and the storm has calmed. Well sort of. But it’s nice to be cooking for two again instead of cheese and meat for one. Hubs is back from working out of town and missing home cooked meals. And I’m happy to oblige.
Tonight I’m making an easy but delicious meal. Horseradish pork chops with a side of veggies. See my recipe here: Horseradish Pork Chops – The Other Other White Meat! I went to good old Costco yesterday and stocked up on meat. $60 for meat that covers at least 20 meals, yeah I’m in. Individualize and vacuum seal the rest to thaw as needed. And money savings boo yah!
But veggies for the side. That was something I had to ponder. I love potatoes. But I’m trying to keep the carbs down so that was out. Which is almost sacreligious in my world. I’m a meat and potatoes gal with a husband to match. So I have to get creative when it comes to a side dish that makes me feel full. Insert carrots and asparagus into that mix. Luckily both are convenient to get for us. So tonight’s side dish is Balsamic Asparagus with Mushrooms. Super easy to make and runs about $3-$4. Dinner grand total is under $8 for two people. Not bad!
- 1 Pound of asparagus – rough chopped into long pieces
- 8oz Mushrooms – thickly sliced
- Garlic – 2 cloves diced
- Salt/Pepper to taste
- 1 Tbs Olive Oil
- 1tsp balsamic vinegar
Preheat oven to 375 degrees. Mix all these ingredients up and place on a lined baking sheet, less mess for clean up. Bake for 25 minutes.
