Ding, ding, ding! Alright round 2 has started. I’m back on the wagon. Back in the saddle. *Insert whatever cliché comment here* I’m cleaning up on the 21 Day Fix again. Yesterday was so hectic that I figured it was already funked up so I should prep everything for the next few days. So I did.Chopping, measuring, laying out, figuring out what I needed, making snack packs (But I thought I was your Snack Pack? What Movie?!?) and prepped tonight’s dinner. It was a crockpot soup. I love a throw it in and forget it. Then get a couple meals out of it 🙂
- Slow Cooker Chicken Enchilada Soup (1R/1G/1B)
- 1 1/2 lbs. boneless skinless chicken breasts
- 1 medium yellow onion, diced
- 1 bell pepper, thinly sliced
- 3 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 15-oz. can diced tomatoes – No Salt Added
- 2 cups chicken broth – Reduced Sodium
- 1 tbsp chili powder
- 2 tbsp No Salt Added Taco Seasoning
- ground pepper, to taste
- 2 tbsp fresh cilantro, chopped
- Shredded Cheese (Optional Blue)
Add the chicken to the bottom of the slow cooker. Add the onion, bell pepper, celery, carrots and garlic on top of the chicken. Pour the diced tomatoes and chicken stock over the top. Sprinkle with chili powder, taco seasoning and pepper. Cover and cook on low heat for 8 hours. Use a fork to shred the chicken before serving. Garnish with cilantro.
I also like to bake 2 corn tortillas in the oven (350 degrees for 10 minutes) and crumble on top. They equal 1 yellow. Completely optional if you are always watching your Yellows like I am.
Also did the Upper Fix Workout. I’m going to have to up my weights. 5 and 3 pounds are not making me feel so sore. Possibly tomorrow my body will be disagreeing with me. Haha!
