21 Day Fix – Day 3 – Round 1

Mexican Chicken Soup.JPGMrs Dash. Have you tried this? I’m incorporating it into many of meals. No salt but lots of flavor! Plus its approved on the 21 Day Fix. I got my mom a bottle last year after my dad had heart surgery and she has incorporated it into their diet which is good. Their diet isn’t great but it’s getting better.

Back to the fun! Leg workout today. I’m hurting. In the way that I don’t want to go pee since its going to hurt to sit down and I’m bracing myself against everything to get back up. So going into the workout tonight I wasn’t very pumped. But man am I glad I did it. I feel so much better. Now I didn’t go as low as I could have when I did my reverse lunges. But by god I gave it all I had.

Day 3 Diary:

  • Breakfast – Shakeology PB = 1R/1T
  • Snack – Grapes – 1P
  • Lunch – Pita, leftover steak (I made an extra foil pack of only steaks so hubby and I would have leftovers today. Except I gave him the leftover veggies and I repurposed mine), salad greens, sliced tomato, mustard and olives = 1Y/1R/1G/1B
  • Dinner – Pictured above. I got the Fixate cookbook yesterday and it was a good thing since I was craving soup (P.S. I’m on the upswing of this cold and am feeling 200% better today). So I combined two recipes to make a meal of what I have on hand.
    • Mexican Chicken Soup – Makes 4 Servings
      • 1/2 c diced onions
      • 1.5 c diced celery
        • sauté the two with t tsp of EVOO once soft add in
      • 4 c low sodium organic chicken broth
      • 3 C chopped chicken breast skinless/boneless
      • 2 c diced carrots
      • 2 tsp Mrs Dash (Garlic Herb is my preference)
      • 1/2 tsp sea salt
      • 1/2 tsp black pepper
      • 8 corn tortillas – bake these in the oven at 350 for 10 minutes. Each serving gives you 2 crumbled up
      • 1/4 c chopped cilantro
    • Boil until the carrots are soft. Then top each bowl with two crumbled corn tortillas and cilantro. So good and this totally hit the spot
    • 1 Y/1R/1G/1/2T

Snacks – Yogurt & 1 Apple to dip in the yogurt possibly? Maybe add cinnamon and mix it up with 1/2 t peanut butter? 1R/1P/.5t

Snack – Snap Peas – 1 G

I feel like I eat so much but I feel so full. Its nice!
