Alright we have roasted a whole chicken https://modernwifetale.com/2015/11/14/3-meals-with-1-item-1st-meal-roasted-chicken/ then turned part of it into a chili https://modernwifetale.com/2015/11/15/3-meals-with-1-item-2nd-meal-white-chicken-chili/. Now to use the final 3/4 cup for one final meal. Truly stretching one protein to the fullest!
Like most people I love pizza. I love that you can eat it with your hands and its uncomplicated. Life has made it so easy you can buy pizza already done for $5. But I like the complication of putting it together on my own. Of course I do right!
- Prepared pizza crust – I used Bobboli since I had a coupon for it
- 3/4 cup chicken diced
- 1/2 cup BBQ sauce
- 1 cup cheddar cheese – shredded
- 1/4 cup green onion – diced
- 1/4 cup cilantro – diced
Preheat oven to the directions on the package. Mine was 425 degrees. Mix all but 2 Tbs of the BBQ sauce onto the crust. Coat it up! Layer on half the cheese. Then top with the chicken, remaining bbq sauce & cheese. Then top with the green onion and cilantro. Bake for 8-10 minutes.
Honestly this was easy and a great lunch for hubby and I. So there you go one major cooking event, the roasted chicken, and you can get 3 meals out of it. Nothing was difficult and everything was cost effective. You can even use a cooked rotisserie chicken. Under $15 for the three meals. I know not everyone’s selection will be that frugal. Just a little bit of planning, a couple coupons and you to can save a couple bucks!
