3 Meals With 1 Item – 1st Meal Roasted Chicken

So I have been out of town and slipping up on blogging. Life just seems to get away from you at a rapid rate and I’ve been trying to enjoy a little bit before the responsibility of life comes back in. Like getting a real job. I haven’t held a full time job since July 15th. It’s been weird. This is the longest break I have ever taken from working full time since I started working 17 years ago. Given I worked part time when I was in high school, but immediately went to full time 2 years after. So to say the least this has been an adventure.

I’ve gone on vacation than I can count (hey I saved up quite a bit of money prior to quitting, don’t hate!). Dare I say I’m vacationed out, ugh. And now I’m ready for a bit of a normal structured life. Crossing my fingers from the interviews I have been participating in that I will get a job I enjoy soon.

Also with everything going on craft fairs are in my near future. Like today!! First craft fair ever and dare I say I’m a bit nervous. Funny thing, went on vacation with a dear friend of mine and she pointed something out. I’m in no way shape or form a strong swimmer and the ocean scares me to death. But we were in Hawaii and you have to snorkel. It’s just too beautiful and amazing to pass up. And I love snorkeling, not sure why. But I’ll only go out if hubby or another strong swimmer is out there with me. But my friend told me it was out of sorts to see me scared of something. Normally I’m collected and keep my shit together but the ocean rocks me. But I’ll still go out and explore. Just under supervision – hahaha! So this fair will be me stretching myself to try something new. And I hope I like it given I have 2 more after that I’ve already paid for my spot at.

To save on some time this week I wanted to cook one thing and get two meals out of it. Well lucky for me I got 3 meals out of one roasted chicken. Now I will cheat occasionally and purchase a rotisserie chicken from Freddy’s to save on time. But the other day they had chickens cheap so I was able to buy a whole chicken for $5. And typically I would just throw it in the crock pot and call it a day but I wanted to roast it and brown up the skin. It turned out really great!

Ingredients:

  • Whole Chicken – 4-5 pounds
  • 1/2 Lemon – quartered
  • 1/2 cup Onion – diced
  • Herb de Province – diced – Amount varies by taste typically 1/4 cup
  • Salt/Pepper

Heat the oven to 425 degrees. Rinse and pat dry chicken. Don’t forget to take out the innards. I squeezed a little bit of lemon over the chicken and stuffed that lemon piece and the remaining ones in to the cavity. Shove in the onion. Salt, pepper & herb de province on top. Bake for 1.5 hours. I start checking around the 1 hour mark to make sure nothing is burning. And that’s it. Main dish is served! Don’t forget to pack up the leftovers for the next meal!

I typically throw a pan of diced carrots, potatoes & onions in another baking dish and bake at the same time for 45 minutes to have a rounded out dinner. Old fashioned meal in a modern time frame?

Check out my next post on the 2nd and 3rd ways I used the remaining chicken. I like to point out that there are only 2 of us so I can stretch things like this a bit farther. If you have a larger family I’m thinking you could roast 2 chickens at the same time. One for the first dinner and the 2nd for the next meal, which will utilize your crockpot! And sorry no picture. It escaped me to take one until I after I deconstructed the chicken.
