I enjoy a good hard boiled, scrambled, over easy, baked in goodies egg. It’s universal. It’s an easy protein. It’s a cheap protein to boot. Well around here it is. And it’s an easy item to mix in or add to a meal.
So my goal of no waste is to use a lot of eggs in one meal. I thought about a frittata. Well I’m limited on fresh veggies and I’m not going shopping right now. So a Cobb salad was also out of the option. But an egg salad sandwich. I have everything on hand so this is my winner.
My only draw back: hard boiled eggs stink when you peel them. Like make you have to open the windows, turn on every fan in the house and light a couple candles stinky. Honestly, who farted?
But they are delicious in my sandwich. Nom Nom Nom!
- 5 Eggs – Hard Boiled & Chopped
- 1/4 c Mayonnaise
- 2 tbsp Mustard
- 1/4 c Dill Pickles – Diced
- Salt/Pepper to taste
Mix it all together.
Now since I’m steeped with my old school ways, my sandwich must be on soft bread. That’s right it should be super soft. No clue why I like it that way. But by God it’s just delicious.
