Frito Pie – When You Don’t Really Want To Cook

I’m usually a prepared modern wife and like most throw my meat in the fridge to defrost the day or two before. Well I was slacking and totally forgot to do this the other day. And I didn’t really want to get dressed to go out to dinner. And where we live the only delivery is pizza, which we had the day before, and I can’t duplicate meals two days in a row unless its leftovers for lunch. Picky husband has made me a bit picky about meal rotations, ha!

So I needed to put dinner together and fast. Cue Pinterest. Seems like there were lots of different options for Frito Pie. I got the general idea of what was needed and just adapted from there. Here is what I came up with.


  • 1 bag of Fritos – Original style in the regular size bag
  • 1 can of Chili (Ok normally I make my own chili and make a batch to leave in the freezer, but back to that whole thawing thing)
  • 2 cups Shredded Cheese
  • 1/2 cup Onion – diced

Preheat the oven to 350 degrees. On the cooktop I grilled up my diced onions. Once cooked I added the can of chili to warm up, and to make it easier to spread. Grab your trusty 9×9 or 8×8 baking dish and lightly grease the bottom of it. Now the layers: Add half the bag of Fritos, chili, a 3/4 cup cheese. The layer the chips, chili and the remaining cheese on top. Bake for 20 minutes.

I like to top mine with sour cream. Maybe a sprinkling of green onions again for that pretty factor. Honestly homemade chili would be the best. I highly suggest the next time you make chili cook a double batch so you can freeze it for another lazy dinner!
