Funeral Potatoes – Side Dish Casserole

Alright I suck, I forgot to take a picture before we started devouring these potatoes. Sorry. But that should be evidence that they are so delicious. Cheese, potatoes, sour cream to start this yumminess. Even though it has a weird name.

The first time I had these I went to my husbands in laws and this dish was there. I thought it was the weirdest thing to have corn flakes on potatoes. I mean who does that? Well this girl does now because its epic! This year at our Friends-giving I couldn’t think of what to make to bring to the pot luck that could feed a large group. Ding ding ding! This recipe. Everyone loved it. Now I have a designated go to side dish for future dinners. Thank god its easy!

Now I’ll admit it is no way shape or form healthy for you. But an occasional cheat is not the end of the world. Plus it makes enough that you can have leftovers. Also its picky husband approved.

Ingredients:

  • 32oz frozen Southern Style Hash Browns
  • 1/2 cup Onion – Diced
  • 10.75oz can Cream of Chicken
  • 2 cups Cheddar Cheese – Shredded
  • 1 1/2 cups Sour Cream
  • 1/2 cup Butter
  • 4 cups Corn Flakes
  • 2 Tbs Garlic Powder
  • Salt/Pepper to Taste

Preheat oven to 375 degrees. Thaw the hash browns. I choose to go the microwave route for 3-4 minutes just to expedite time. Mix the cream of chicken, onion, sour cream, garlic powder, s/p and cheddar cheese in a 9×13 glass dish. In another bowl melt the butter. Pour the corn flakes over the top of the casserole and pour the melted butter on top of that. Bake for 45 minutes.

I served this with fresh salmon that hubs just caught. It was a great meal. I have even premixed this casserole and thrown it into the fridge for a couple hours prior to baking.

I love a good side dish. What about you?
