Happy National Cheeseburger Day!! I love cheeseburgers. It’s got beef, bread, veggies, and a whole world of mixings. And they usually include french fries which I love with tartar sauce. Because of this National Holiday I decided to try something different instead of a just a regular cheeseburger. Pinterest had a million ideas and I went with cheeseburger casserole. Really though this was going to be an odd meal. Ketchup and mustard baked. That’s different. Well I was wrong. This was yummy and easy. Here is my breakdown of how I made it to suit our tastes.
- 1 lb ground beef
- 8 slices of bacon – diced
- 1/2 cup onion – diced
- 2 cups cheddar cheese – shredded
- 1 bag of frozen tater tots
- 1/4 cup ketchup
- 1/4 cup mustard
- 1 clove garlic – diced
- 1 tsp garlic powder
Preheat oven to 425 degrees. Cook the ground beef & drain any fat. While the beef is cooking I cut up my bacon and fry it up. When the bacon is about done I throw in the onion to get that juicy bacon flavor infused in it (can you tell I’ve been watching cooking shows a lot right now? – haha). Once cooked, drain any fat that remains.
Mix the beef, garlic clove & powder, bacon, onion, salt/pepper, ketchup & mustard all together in the beef pan. Let those flavors meld together for about 5-7 minutes and pour into a 9 x 13 baking dish. Layer the cheese on the meat mix and then top it all off with the tater tots. Bake for 20-25 minutes so those tots get nice and toasty and viola you are done!
I really enjoyed this and what an easy way to enjoy National Cheeseburger Day with a home cooked meal. Have a side salad with lettuce & tomato and you have a well rounded deconstructed cheeseburger!
And during this whole time typing all I can think of is Napoleon Dynamite – “Give me some of your tots!” and him pulling them out of his pocket to eat. So awkward!!
