Truly easiest meal ever. Open a few cans, pour into a pot, heat and enjoy. It’s really that easy. Plus with fall knocking on our weathers door I needed a warm meal. Soup totally fits the bill. And with this not including meat you can make this for your meatless Monday meal. Just substitute the beef broth with vegetable broth.
I really enjoy a few ingredient meal when you just are not in the mood for cooking but you are way to lazy to figure out what to order in. Picky husband likes home cooked meals so it’s usually on my shoulders to figure something out. And after a busy run around day today I wanted easy all the way around.
5 Can Soup
- 1 can corn
- 1 can Italian diced tomatoes
- 1 can kidney beans – drained
- 1 can beef broth – Vegetarian or chicken broth can easily be substituted
- 1 can refried beans
Place all ingredients in a soup pot on the stove and simmer until the refried beans have a liquid consistency about 10 minutes. And that is it. Literally that’s it. How crazy easy is that?
Because it’s dinner I like to up my game a bit so I added shredded cheese and green onions from the garden. You could add sour cream, tortilla chips, chicken, beef, hell whatever you want. This soup works great as a starter to add-on. Cheap and easy – just like a few of my friends like their lady friends. Haha! I crack myself up.
