Weekend Snack – Chocolate Butterscotch Blondies

Blondies - Yummy!

Blondies – Yummy!

So I had a craving for brownies the other day. But picky husband doesn’t like chocolate brownies so I was trying to find a happy ground. I forgot all about Blondies until I was scrolling around Pinterest. And Pinterest being the way it is I found 600+ recipes for blondies.

So after scrolling thru a million of them I found a recipe that I had some of the ingredients on hand. I just modified the rest. And these were delicious. Even picky eater husband enjoyed them!

Ingredients:

  • 2 cups light brown sugar
  • 10 Tbsp butter – melted
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips – semisweet or milk your choice
  • 1/2 cup butterscotch chips

Preheat oven to 350 degrees and grease a 9×13 glass pan. Mix together the melted butter with brown sugar. Then mix in the eggs and vanilla. Add the flour, baking powder, baking soda and salt until combined.

Pour half the batter into the baking pan. Sprinkle half the chocolate & butterscotch chips on top. Layer the rest of the batter and top with the remaining chips. Bake for 20-25 minutes.

This was delicious and I will hands down make it again. Maybe a double batch for the next fun event.

Now that we are done installing our new roof, it looks amazing btw, I’m ready to move on to new adventures. I have some exciting things coming up in the near future so keep your eyes open and follow my blog to stay in the loop!
