Egg Muffins – Healthy Breakfast Option

 So I’ve taken a hiatus from work for a bit and this has really let me expand my options when it comes to cooking. One thing I’m pretty stagnant on changing up is breakfast. It’s usually eggs, bacon, hashbrowns & toast. Simple & basic. But that damn Pinterest has me checking out some new options.

Typically breakfast seems to be drowned in gravy and mostly fried. Or a butt load of butter, which I love but it’s not the best way to start the day right after you work out for an hour or so. So checking out Pinterest I found egg muffins that I could modify to fit what I have on hand.

Ingredients:

  • 5 eggs
  • 1/2 cup cheese
  • 4 slices deli ham – diced
  • 1/4 onions – diced
  • 1/4 mushrooms – diced
  • Salt & Pepper

Preheat the oven to 375 degrees and grease up your muffin pan. This recipe is to make 6 muffins. I cooked up my ham, mushrooms & onions on the cook top until heated.

 While that was going on I mixed my eggs, cheese & salt/pepper.


Stir the ham and veggies into the eggs, mixing thoroughly. Pour into the greased muffin tins. Bake for 25 minutes.

I made some biscuits to go on the side but really you could do anything. The baking time is great to get something done before going to work. Or in my case before I go blog or whatever my funky schedule holds out for me!
