Broccoli Bacon Salad

I think all of us have had this one or more times at a potluck. For my own wedding we requested it. Family “What do you want for a wedding gift?” Me “Could you make a batch of potato salad, you a fruit something or another & you a broccoli bacon salad.” As you can see I’m pretty informal. Mind you I was only 19 when I got married and didn’t want a big hoopla for the day. To make it even easier, and save on cost, we got married at the community center on a Wednesday night with family doing some of the cooking as a present. See basic as can be.

Back to the salad. It’s summer and I’m not into lavish meals while I’m roasting in the sun. Hence the salad posts lately. So this is something I can whip up in the morning and we can eat on it later during the day. Either lunch or dinner appropriate. Or take it to a potluck – Ha!

Broccoli Bacon Salad

  • 4-6 cups of chopped broccoli heads
  • 1/2 – 1 lb bacon, cooked and diced (basically the best food ever!)
  • 1/2 c sunflower seeds
  • 1/2 c onion, diced
  • Dressing
    • 1/2 c mayo
    • 1/2 c sugar
    • 2 Tbs apple cider vinegar
    • Salt & Pepper to taste

This salad is so easy you just have to mix everything together and you are done. I typically fry up the bacon and then prep the rest while its cooking. Some people like to add raisins. Not really my thing so I skip them. Like most of my foods, variations are really up to your tastes.
