So my husband can be a picky eater. He doesn’t like pasta, hot tomatoes, and on and on. So many of the major food that’s available in this world. He loves meat and potatoes. We both do. I just also like more variety in my life. That’s one of the hardest things for me as the household chef is to accommodate both our tastes. But we both love this casserole I’ve put together with a few different recipes in this galaxy. It’s easy to prepare and he, along with most men, love it.
Meat & Potato Casserole
- 1 lb Ground Beef – Options: Turkey, chicken, deer, whatever you have on hand
- 1 can corn, drained
- 1 small can tomato sauce
- 1/2 cup salsa
- 2 cups cheddar cheese, shredded
- 1/2 cup onion, diced
- 4-5 russet potatoes, diced – I leave the skins on, preference
- 1 T taco seasoning
- 1 T diced garlic
- Salt & Pepper
Preheat oven to 400 degrees. Brown ground beef. Make sure you do this in a bigger frying pan so you can fit all the ingredients. While beef is cooking cut up the potatoes and throw into a greased 13×9 glass baking dish. Salt and Pepper to taste on the potatoes and toss about 1/2 cup of cheese on them.
Once the beef is almost browned add onion and garlic. Once cooked add corn, tomato sauce, salsa, taco seasoning and Salt & Pepper. Let simmer for 10 minutes and then pour on top of the potatoes.
Add the remaining cheese to the top of the casserole. Cover with foil and bake 50 minutes. Take off foil and let the casserole finish for 10 minutes to brown up that delicious cheese. You are now ready to enjoy your delicious casserole. I like to add a dollop of sour cream to mine just because I like it.
You can do so many variations to this and it will still be delicious. I tend stay close to this so I don’t have to listen to my picky eater discuss it – Haha! Does anyone else out there have a picky eater they accommodate meals for? It certainly forces you to be creative. And sometimes fib about some ingredients just for your own sanity sake.
Also, if you need a man pleaser meal this will do it (maybe a lady pleaser?). I have fed numerous friends, family, coworkers, you name it and I have never had them complain about this meal. Maybe because it’s made with love – Hahaha!
